Homemade English Muffin Recipe
1/2 c. shortening
3 t. salt
2 t. sugar
2 c. hot water
2 T. yeast
5 c. flour
•Put shortening, salt, & sugar in a large bowl.
•Pour hot water over all & stir til shortening melts.
•Let cool til lukewarm.
•Sprinkle yeast over top, stir to dissolve; let stand til mixture begins to bubble.
•Add flour & mix well.
•Roll out onto floured board to 3/8" thick.
•Cut with cutter. A clean tuna can with top & bottom removed works well.
•Sprinkle cookie sheets with cornmeal.
•Place muffins on sheet & let rise to double.
•Heat griddle.
•Sprinkle with cornmeal.
•Put muffins on & cook for about 7 minutes; flip, cook for about 7 minutes more.
•Split with fork.
